Everyone knows the traditional herring recipe under a fur coat: slices of fish fillet, onions, boiled potatoes, carrots, eggs and beets, smeared in layers with mayonnaise. It is unconditionally tasty, but do not give up experiments.

Everyone is accustomed to see herring under a fur coat on a large plate, from where, in the likeness of a cake, everyone takes it with a spatula. This way of serving has its drawbacks: the plate takes up space on the table, the process of shifting the puff dish is not the most convenient, and the appearance goes bad. A good solution would be portion serving for each guest - It is neat and beautiful.
There are several options:
- to form a salad in layers in a special culinary ring directly on a plate, and remove it before serving;
- place the layers of lettuce in a low glass and serve in it;
- in sand or waffle tartlets.
Interesting fact: in serving herring under a fur coat there are two design options for the last, beetroot layer: coated with or without mayonnaise. In the first case, the effect is pink sauce, about which there are many jokes. The second method is considered more accurate and is used in restaurant serving - grated beets are simply laid on top without covering with mayonnaise.

The order of the layers in the finished dish is classic, but the cooking progress is different:
- First you need to spread the cling film on the table, lay out a layer of grated beets and evenly distribute in the shape of a rectangle. At this stage, it is better not to lubricate with mayonnaise so that the roll keeps its shape well.
- Next, the remaining layers are stacked. Products need to be condensed with a spoon and greased with mayonnaise. Each subsequent layer should be slightly narrower than the previous one.
- The last layer will be a strip of herring in the center of the rectangle.
- Now with the help of oilcloth you need to carefully roll the roll, tightly pressing the edges.
- Lettuce leave to infuse in the refrigerator overnight.

7. In beetroot and potato balls

To realize this idea, you need to prepare the products: grate boiled vegetables in different containers, add mayonnaise to each separately and mix. Cut herring into cubes, you can immediately add onions to it. The only thing left is to form balls.
Tip: to make a puff salad in the form of balls, it is better to use food gloves (for example, nitrile) and wet your hands after each finished serving. So the products will not stick much to the hands and mix with further work.
On the palm you need to put a tablespoon of potatoes, and on it - herring, and then blind the ball. Then it remains to cover portions with other vegetables on top, forming an unusual snack-ball.
6. With beetroot roses

For the preparation of “rubies” you will need 150 ml of cold water, 20 g of gelatin, 200 ml of squeezed water from boiled beets. First, the gelatin is soaked (10-15 minutes before swelling), then added to beetroot water.
The resulting jelly base is poured into a mold with a layer of up to 0.5 cm and sent to the refrigerator. After a couple of hours, the cooked salad can be improved: grease the top with a layer of mayonnaise and lay the entire surface diced into jelly.
1. Under beet and cheese mousse
One of the best additions to a classic salad is hard cheese. You can apply it both as one of the layers, and as part of beet cheese mousse.
To prepare this option, you need to make the basis of the salad, but do not spread the last layer. It will be a gentle mousse, for which you need:
- Grate cheese (100-150 g) and boiled beets on a fine grater.
- Squeeze the water from the beets, mix it with cheese and add a couple of tablespoons of mayonnaise.
- Kill the finished mass with a blender until smooth.
